Add the Brussel sprouts to a mixing bowl, and add 1 tablespoon of olive oil, garlic powder, and salt and pepper to taste. Stir well to combine.
Place the brussels sprouts into a parchment-lined tray or fry basket, and cook for 8-10 minutes when they have softened and begun to brown and turn crispy.
In a bowl, combine the other tablespoon of olive oil, parmesan cheese, and pork rind crumbs. Stir to combine, and then sprinkle the mixture over the brussels sprouts.
