Sloppy Joe Cornbread Casserole is a delicious and hearty dish that combines two classic favorites - the tangy taste of Sloppy Joes, and the sweet flavor of cornbread.
Before you begin prepping for your Sloppy Joe casserole, make sure you gather all the ingredients. Once you have everything ready to go, preheat your oven to 400°F.
Spray your casserole dish with non-stick cooking spray if needed and set aside.
To make the sloppy Joe filling, heat a large skillet over medium-high heat and saute your ground beef, yellow onion, and bell pepper. Cook until meat is browned and veggies are softened. Drain the excess fat if needed.
Add in the garlic powder, mustard, ketchup, brown sugar, water, and salt and pepper to finish off the sloppy joe mixture. Mix thoroughly and reduce heat to low.
Allow the sloppy joe mixture to simmer for 10-15 minutes, stirring occasionally.
While the sloppy joe mix is heating whisk together the cornbread topping, the mix, egg, and milk.
When your meat is finished simmering transfer the cooked mix to your prepared casserole dish.
Spoon the cornbread mixture over the top making sure to spread it all the way to the edges for a nice crispy crust. If you feel like it doesn't have enough cornbread you can use two packages of mix (just be sure to double the eggs and milk too). You will also need to adjust the cooking time, cook until golden brown and a toothpick comes out clean.
Place in preheated oven and bake for 15-20 minutes or until cornbread is golden brown. Let cool for 10 minutes before slicing and serving!
