If you are a peppermint fan then you will definitely want to stick around for today's post.
These homemade peppermint patties are better than store bought and super easy to make.
All you need is just a few ingredients and you are on your way to that refreshing creamy mint taste.
Homemade Peppermint Patties
You will need!
- 1 tablespoon [easyazon_link identifier="B00CPZPYLS" locale="US" tag="thgisli03-20"]coconut oil[/easyazon_link]
- 3 tablespoons half n half
- 1 tablespoon light corn syrup
- 1 teaspoon lemon juice
- 1½ teaspoons [easyazon_link identifier="B004HFPNTW" locale="US" tag="thgisli03-20"]peppermint extract[/easyazon_link]
- ½ teaspoon vanilla
- 3¾ cups powdered sugar
- 1 package chocolate CandiQuik or any chocolate melts
Directions:
Mix together coconut oil, 2 tablespoons of half n half, light corn syrup, lemon juice, peppermint extract and vanilla.
Now you will want to mix in the powdered sugar one cup at a time. Once you get all the powdered sugar mixed in turn the speed up and let the mix become nice and creamy. If it happens to be a little crumbly you can add in a tablespoon of half n half.
Divide the dough into small balls (½ inch to 1 inch in size) using your hands, pat dough into ¼ inch thick. Place on a piece of wax paper lined tray and place in freezer for 3-4 hours.
Melt CandiQuik in the microwave or a melting pot so your chocolate is ready to dip.
Line a second tray with wax paper and remove mints from freezer. Dip bottom side in melted chocolate then using a spoon pour chocolate over top of mints to cover. Repeat!
Store in an airtight container for up to 2 weeks. Not that they will ever last that long. 🙂
