My daughter has been wanting to make cake mix cookies for awhile now and it was on our to do list this weekend. We decided to go an extra fun step and turn them into mini cookie sandwiches. I love how they turned out and I think they would make great little desserts for birthday parties, baby and wedding showers, etc. We decided to do ours in purple, pink, blue and green but you could dye them to any color to coordinate with your event. 🙂 I love how they also remind me of faux macaroons.
These cookies are super easy to make.
INGREDIENTS:
1 Box White or Yellow Cake Mix
1/4 Cup Vegetable Oil
2 Eggs
(Food Coloring, optional)
Frosting
DIRECTIONS:
- Mix the box mix, oil and eggs together
- Separate dough equally if you want to color them. If not skip this step. Use about 10 drops to begin with and add drops depending on how dark you want your color.
- Wrap in plastic wrap and chill for approximately 30 minutes. If you don’t allow the dough to chill it will be a huge mess trying to make balls for the cookies.
- Preheat oven to 350 degrees and cook for approximately 7 minutes. Keep in mind how your oven cooks and adjust the time accordingly.
- Cool on a cooling rack for approximately 1 minute.
- Add a little frosting on one cookie and top with another.
