Turkey Salad Sandwich Recipe: Thanksgiving Leftover Ideas

Leftovers are the name of the game the weekend after Thanksgiving.  Today I wanted to share with you a way I spice up the traditional turkey sandwich by making a turkey salad sandwich made with Kraft Mayo. Super simple and quick, which is great if you are headed out Friday to get some Christmas shopping in.

Turkey Salad Sandwiches

Ingredients
  

  • 1-½ cups mayo
  • 6 hard-boiled eggs chopped
  • ½ cup finely chopped sweet pickles
  • 1 teaspoon pickle juice optional This just brings out the flavor.
  • 3-½ cups finely chopped leftover turkey meat white or dark ... You could also substitute with chicken.

Instructions
 

  • Boil your eggs and chop into pieces.
  • Finely chop half a cup of pickles.
  • Mix in a bowl the Mayo, eggs and pickles (plus optional pickle juice).
  • Gently stir in chopped turkey.
  • Allow to chill in the fridge for at least an hour before serving.
  • Serve on your leftover rolls or bread.

    We don't have any left overs from Thanksgiving. However we are hosting Christmas so I am sure we will have plenty then.

    I like everything you did but I like to keep my turkey sliced. it's still a sandwich but not chopped into a salad. I also love LOTS of mayo and toasted bread. I can't wait for friday
