Leftovers are the name of the game the weekend after Thanksgiving.  Today I wanted to share with you a way I spice up the traditional turkey sandwich by making a turkey salad sandwich made with Kraft Mayo. Super simple and quick, which is great if you are headed out Friday to get some Christmas shopping in.

Turkey Salad Sandwiches

  • 1-1/2 cups mayo
  • 6 hard-boiled eggs chopped
  • 1/2 cup finely chopped sweet pickles
  • 1 <g class="gr_ gr_57 gr-alert gr_spell gr_run_anim ContextualSpelling" id="57" data-gr-id="57">Tsp</g> pickle juice optional This just brings out the flavor.
  • 3-1/2 cups finely chopped leftover turkey meat white or dark ... You could also substitute with chicken.
  1. Boil your eggs and chop into pieces.
  2. Finely chop half a cup of pickles.
  3. Mix in a bowl the Mayo, <g class="gr_ gr_54 gr-alert gr_gramm gr_run_anim Punctuation only-ins replaceWithoutSep" id="54" data-gr-id="54">eggs</g> and pickles (plus optional pickle juice).
  4. Gently stir in chopped turkey.
  5. Allow to chill in the fridge for at least an hour before serving.
  6. Serve on your leftover rolls or bread.

I like everything you did but I like to keep my turkey sliced. it’s still a sandwich but not chopped into a salad. I also love LOTS of mayo and toasted bread. I can’t wait for friday

We don’t have any left overs from Thanksgiving. However we are hosting Christmas so I am sure we will have plenty then.
