Homemade Peppermint Patties

You will need!

  • 1 tablespoon [easyazon_link identifier="B00CPZPYLS" locale="US" tag="thgisli03-20"]coconut oil[/easyazon_link]
  • 3 tablespoons half n half
  • 1 tablespoon light corn syrup
  • 1 teaspoon lemon juice
  • 1½ teaspoons [easyazon_link identifier="B004HFPNTW" locale="US" tag="thgisli03-20"]peppermint extract[/easyazon_link]
  • ½ teaspoon vanilla
  • 3¾ cups powdered sugar
  • 1 package chocolate CandiQuik or any chocolate melts

Directions:

Mix together coconut oil, 2 tablespoons of half n half, light corn syrup, lemon juice, peppermint extract and vanilla.

Now you will want to mix in the powdered sugar one cup at a time.  Once you get all the powdered sugar mixed in turn the speed up and let the mix become nice and creamy. If it happens to be a little crumbly you can add in a tablespoon of half n half.

Divide the dough into small balls (½ inch to 1 inch in size) using your hands, pat dough into ¼ inch thick. Place on a piece of wax paper lined tray and place in freezer for 3-4 hours.

Melt CandiQuik in the microwave or a melting pot so your chocolate is ready to dip.

Line a second tray with wax paper and remove mints from freezer. Dip bottom side in melted chocolate then using a spoon pour chocolate over top of mints to cover. Repeat!

Store in an airtight container for up to 2 weeks. Not that they will ever last that long. 🙂

Know a neighbor or friend that enjoys these? Package up a few in a cute little tin and I guarantee they will be delighted. A tasty treat that you took the time to home make yourself. We just won't tell them how easy they were to make.
