Ingredients you will need for Cornbread Sloppy Joe Casserole

  • 1 lb ground beef (you could substitute for ground turkey or ground chicken if preferred)
  • ½ cup of chopped yellow onion
  • ½ cup diced green bell pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon yellow mustard
  • ¾ cup of ketchup
  • 3 teaspoons of light brown sugar
  • ½ cup water
  • pepper and salt (to taste)
  • 8.5 oz box Jiffy corn muffin mix
  • 1 large egg
  • ⅓ cup of milk



Equipment you will need:

  • 8x8 or 9x9 Casserole Dish
  • Large Skillet
  • Santoku Knife
  • Measuring Cups/Spoons
  • Mixing Bowl



How to make Sloppy Joe Cornbread Casserole

Before you begin prepping for your Sloppy Joe casserole, make sure you gather all the ingredients. Once you have everything ready to go, preheat your oven to 400°F.


Spray your casserole dish with non-stick cooking spray if needed and set aside.


To make the sloppy Joe filling, heat a large skillet over medium-high heat and saute your ground beef, yellow onion, and bell pepper.


Cook until meat is browned and veggies are softened. Drain the excess fat if needed.



Add in the garlic powder, mustard, ketchup, brown sugar, water, and salt and pepper to finish off the sloppy joe mixture. Mix thoroughly and reduce heat to low.



Allow the sloppy joe mixture to simmer for 10-15 minutes, stirring occasionally.



While the sloppy joe mix is heating whisk together the cornbread topping, the Jiffy mix, egg, and milk.



When your meat mixture is finished simmering transfer the cooked mix to your prepared casserole dish.



Spoon the cornbread mixture over the top making sure to spread it all the way to the edges (the best you can) for a nice crispy crust.


If you feel like it doesn't have enough cornbread you can use two packages of the mix for a thicker cornbread layer (just be sure to double the eggs and milk too).


You will also need to adjust the cooking time, cook until golden brown and a toothpick comes out clean.



Place in preheated oven and bake for 15-20 minutes or until cornbread is golden brown. Let cool for 10 minutes before slicing and serving!

Can I make this in a 13×9 baking dish?



Yes, you can double the recipe and it will fit well in a 13x9. If you are cooking for a potluck or friends I would definitely suggest doubling the recipe. Just remember you will have to increase the cooking time.

Can I use Canned Sloppy Joe Mixture?



Yes, you can definitely just use canned sloppy joe sauce to mix with your ground beef. However, I highly recommend trying the homemade version because it is so much more flavorful.

Can I Freeze Sloppy Joe Cornbread?



Yes, this would be a great casserole to make ahead of time and freeze. It will stay fresh for up to 3 months.

How do I store leftovers?

Store the casserole in an airtight container for up to 3-4 days in the refrigerator.
