Ingredients for chocolate chip salted caramel cookie bars

Salted Caramel Ingredients:

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, room temperature
  • ½ cup heavy whipping cream
  • 1 teaspoon sea salt

Chocolate Chip Cookie Ingredients:

  • 1 cup unsalted butter, room temperature
  • ¾ cup brown sugar, packed
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 cups dark chocolate chips

How to make salted caramel chocolate chip cookie bars!

To make the salted caramel: Add sugar to a small saucepan on medium-low heat.

Allow the sugar to slowly melt, stirring every 20-30 seconds.

It will begin to caramelize into chunks, and eventually smooth out into a liquid.

Once melted, remove from heat immediately and stir in the butter.

Add heavy cream and salt. Stir until incorporated.

Transfer caramel to a bowl and allow it to cool.

Preheat oven to 350 degrees F. Grease a 9x13” baking dish and set aside.

In a large mixing bowl, add butter, brown sugar, granulated sugar and vanilla extract. Cream together using a hand-held mixer on medium speed.

Add in eggs, one at a time, mixing in between until incorporated.

Add flour, baking soda, baking powder and sea salt to the batter. Mix on low speed until combined.

Fold in chocolate chips.

Divide the cookie dough in half. Press half of the dough into an even layer in the prepared baking dish.

Bake in preheated oven for 10 minutes.

Pour cooled salted caramel over the top of the baked cookie dough layer.

Use a spatula to spread the caramel into an even layer that covers the entire surface.

Use the remaining cookie dough to form a top layer by scooping a ball of dough into your hands, flattening it and gently placing over the caramel layer.

Some caramel may peak through the top layer of cookie dough.

Bake for an additional 15-18 minutes, or until golden brown.

Allow the bars to cool before slicing and serving.

Frequently Asked Questions

Can I use store-bought caramel sauce instead of making my own?

Absolutely! While homemade caramel adds a special touch, store-bought caramel sauce can be a convenient and equally delicious option.

Do I have to use sea salt, or can I substitute with table salt?

Sea salt's larger flakes and milder flavor enhance the caramel's taste and provide a delightful contrast. However, you can use table salt in moderation if needed, adjusting to taste.

Can I freeze these cookie bars for later?

Yes, you can freeze these cookie bars for up to a month. Ensure they are well-wrapped to prevent freezer burn, and thaw them in the refrigerator or at room temperature before enjoying.

What's the secret to achieving gooey caramel centers?

The key lies in layering the caramel within the dough and baking at the right temperature. Make sure not to overbake, as that can cause the caramel to harden.

Can I use a different type of chocolate chips?

Certainly! You can use milk, dark, or white chocolate chips based on your preference. Mixing different types can also add an interesting twist.

What's the best way to store leftover cookie bars?

To keep them fresh and gooey, store the bars in an airtight container at room temperature for up to 3-4 days. For longer storage, refrigerate or freeze as mentioned earlier.

My cookie bars turned out too dry. How can I prevent that?

Overbaking can lead to dryness. Be vigilant with the baking time and consider reducing it slightly if you prefer a gooier texture.

Can I make these bars in advance for an event?

Absolutely! These cookie bars can be prepared a day in advance and stored properly until your event. In fact, they often taste even better the next day.

What's the best way to cut these bars neatly?

Allow the bars to cool completely before cutting, ideally refrigerating them for a short while to firm up. Use a sharp knife, wiping it clean between cuts for cleaner edges.
