How to Make Easy and Cute Easter Bunny Cupcakes

Easter is around the corner, and what better way to celebrate than with delicious Easter bunny cupcakes?


These cute and easy-to-make Easter treats are made with marshmallow ears, making them as fun to create as they are to eat.

Perfect for gatherings and an Easter celebration, these classic adorable cupcakes will be a hit among kids and adults alike.

Simple ingredients you will need to make bunny face cupcakes

  • 24 prepared cupcakes - These can be vanilla, chocolate, strawberry... Whatever flavor of cake you like best. You can also buy store-bought plain vanilla or chocolate frosted cupcakes.
  • 32-48 ounces of white frosting - You can also use chocolate frosting for a brown bunny.
  • 28 regular-sized marshmallows
  • 1 ½ cups of shredded coconut - If you are allergic to coconut or don't like the taste you can substitute for white sprinkles.
  • Pink sugar or pink sprinkles
  • 48 mini chocolate chips - or white chocolate chips if you go with chocolate buttercream frosting cupcakes



The equipment we used:

  • piping bag
  • 2 small bowls
  • Kitchen Shears
  • Knife
  • spatula



Easy Easter Bunny Cupcakes Recipe



Either use a piping bag or spatula to place the vanilla frosting on top of each cupcake. A nice rounded mound looks best.



Place the coconut in a bowl, and dip the top of the cupcake into the coconut until the frosting is fully covered.


If you plan to use chocolate cupcakes you can substitute the coconut for brown sprinkles.



How do you make a bunny ear out of marshmallows?



Cut 24 marshmallows at a diagonal with clean, sharp scissors. If the scissors get too sticky, wash them between cuts.



Place the sanding sugar in a small bowl.


Dip the sticky side of the marshmallow into the sanding sugar.


You can pinch the marshmallows to push the centers down so that the edges pull away from the sugar to get a white ridge around the ear.



Place the marshmallow halves on top of each cupcake creating the bunny ears. If they aren’t sticking, you can apply additional frosting to help them stand up.



Cut the remaining marshmallows into 6 pieces.


I cut them in half vertically, then each side got cut into thirds.


Then I used my fingers to form it into a ball, trying to get the sticky parts on the outside of the ball.


Roll the balls in the sanding sugar and apply it to the bunny's face.

You can also use mini marshmallows cut in half for this part or pink jelly beans.


Apply mini chocolate chips for the eyeballs to finish off the bunny faces. Using tweezers was really helpful for this!



Can you make these in advance?

Yes, you can bake the cupcakes a day in advance but I recommend decorating them the day of.


I definitely recommend making the cupcakes ahead of time if you are wanting to do a cupcake decorating party with kids!



Can I make my own pink sugar?

Definitely! All you need to do is add sugar to a plastic bag and then a few drops of pink food coloring.


Mix until the color is distributed evenly and allow to dry.



How to store these easy bunny cupcakes



If you need to store any of these cupcakes you will want to store them in an airtight container but be sure it's tall enough so the bunny ears don't get smashed.
